Venison Snack Sticks

Wer in snack stick heaven, batch we made on saturday, 80 lbs worth, 4 flavors (LEM) original, pepper, pepperoni and Hot, smoking was completed on sunday. Vacuum sealing today. Very good, LEM has great seasonings.

Picked up a 6 pack at the butcher’s and smoked 3 on the ride home. Best I ever had but @ a buck apiece. Not sure where he gets the venison and didn’t ask, I guess farmed.

For what it's worth......you're paying $8.69/lb to buy it. At Markwells, you provide the meat and he charges $8/lb. I'm guessing other processors are similar.

We don’t have Markwell’s close to me, never heard of it. I know of nobody down here outside of Yoder’s in Paris, TN that does it but I’m sure there’s a few. Honestly, I didn’t mind paying $6 for the hour ride home they were bomb.

Markwell's is a deer processor in Lawrenceburg. My point is you're paying the same as everyone else, and you don't have to provide the deer meat ! I know he cuts the total in half as well.....provide 20 lbs of boneless meat, get 10 lbs of snack sticks.....at $8/lb.

Dang that’s right, but man it seemed high just on first thought.

Ain't no shame in buying some or having someone else do them for you.

I payed Boones in Bardstown to do some for me many years ago. There were good & no complaints other than the $$$. For what it cost me to have it done I bought the "basic" equipment to do it myself.
I've added more equipment along the way but enjoy doing it & encourage anyone interested in it to give it a try. A small stuffer,meat grinder & smoker are all you need.
