I made the recipe below this past weekend, and it was so good that I would like to share it. I doubt I will ever grind a deer shank again.
Venison Shanks - Crock Pot
Start around breakfast time in order to eat for dinner.
Leave meat on the bone but cut each end of bone off.
Prepare chopped onions about an inch deep in crockpot.
Add a layer of carrots, celery, and 4-5 cloves of garlic.
Drizzle olive oil atop of the veggies.
Add salt, pepper, and any other seasonings you want.
Place shanks on top of veggies.
Put a slab of butter on each shank.
Add a dash of apple cider vinegar and more seasoning.
Layer slices of 3-4 peppers on top of meat.
Cover and heat on high for about an hour.
Reduce to low for another 2 hours.
Add in 2 beers. (I used Guiness.) Crank up to high for 20 minutes to heat beer.
Reduce to low for 4-6 hours.
Lift leg bones out. Push marrow out into pot with a wooden spoon. Stir.
Cook another hour.
Serve in stew bowls.
