Shoulders worthless for anything but jerky.

That’s like saying if you want good jerky, use the Backstrap. Haha.
The only thing I use shoulder for is bake it and BBQ it. The silver and tendons get cooked up. I don't want to eat that stuff in my jerky. I usually roast/steak 1 hind quarter, jerky the other, and fry the backstraps.

In 2019 I started using the recipe for a marinade that came from a KYAfield show. The only thing I do to it is a dash of dales seasoning and a dash of A1. I’ll post a picture of the recipe from the show. It’s a huge hit here. I have used it on beef and venison.

Or have actual venison jerky rather than soy sauce jerky. I never understood the purpose of Dale’s, I actually like the taste of venison.
Oh I hear ya, and I do too. But for a marinated slab jerky, Dale's is where it's at. But I am gonna try the way you describe too. Hadn't ever thought about it but it just makes sense. Just alot of damn work lol

I’ve made a lot of jerky over the years using marinades and they were all good. I ran across the no soak, just season well and pound method 12 years ago and have never looked back. The trade off of having to pound your meat is zero marinade mess. That mess always got all over everywhere and everything for me. Plus my 54 year old teeth just aren’t what they used to be and the tender jerky helps. I’m afraid I’ve ground my teeth down to about gone.

I am a little older than you and my teeth just break leaving half the tooth. Soon I will have to see about some of those store-bought teeth or stop by the undertakers and see if they have a extra pair. Tough jerky or tough steak is hard for me to eat now and I am constantly using a toothpick.

My Grandson is home from school today and it may be my fault. He has been eating the heck out of my jerky and this morning he woke up with wire hanging out of his mouth, so he has to be at the dentist today to get them fixed for the fourth time. Ever since he had them put on, they keep breaking or coming loose.

That's why in my original post. I said a little goes along way.
If any one try's the low sodium dales do not dump the whole bottle. Only enough to coat each piece. After 24 hours ,drain through colander and dry with a hand full of paper towels. When I load my racks nothing drips through , well maybe a few drops.
