Venison backstrap cooked like filet mignon

    Just got done eating this. It was great. First time my wife and daughter had it, 2nd for my son and I. Ladies said they preferred it this way from now on.
    Start will backstrap cleaned up, no silver skin left and slice about 1.5" thick. Dust both sides with Cavenders and garlic salt and pepper. Wrap with bacon and toothpick it on. Soak toothpicks ahead of time. Used half a bulb of garlic and minced it down.

    Add half a stick of butter to very hot cast iron skillet. As butter melts and bubbles, add your garlic. This part is about the only tricky thing involved. Cook the garlic for only about a minute...just enough to flavor the butter. When you barely see it browning, it's time to add the meat.

    Make sure you move the garlic out of the way when you place the meat in there or you won't get good metal to meat contact for a proper sear. After a couple minutes, flip them and again make sure the contact is good.

    Brown this and remove and place on baking dish. It is important to stop the garlic from cooking right now in the cast iron skillet, otherwise it will burn. I added 1/4 stick of butter to make more sauce and to cool it down.
    Stick probe in and under the broiler until 145 degrees

    Remove and spoon garlic butter over it liberally
