Turkey day smoking

    Loading the smoker with deer, wild turkey, and trout. I brined the trout in a gallon jar over night in the fridge. The deer was marinated in Italian dressing over night. First time for that...

    I marinate wild turkey italian dressing , good stuff!

    Sounds like a great plan, while I have enjoyed smoked fish several times I've yet to attempt it myself. Let us know how it turns out.

    The trout was good as always. Smoked is about my favorite way to cook trout. You can even use the left overs the next day for breakfast. Just mix with some cream cheese and put on a toasted bagel.

    The venison was OK but I won't won't use Italian dressing for marinade again. I'll wrap it with bacon.

    The turkey drumsticks were just fine. Almost ham like after soaking over night in a brine.

    My wife's cousin smoked a turkey for our feast. He's fairly new to smoking. He rolled the smoke on that bird way too long..... Not good.

    I usually do a turkey every year. I brine it overnight and then season with butter and Cavendar’s Greek seasoning and put a light smoke on it.
