[:D]Ahhh, I love this time of year! The last few weeks, Dinner at my house has been like this (And Lunch much the same[:D]):

Smothered Tenderloin ( Deer cooked w/ Red wine sauce & Veggies)
Fried Tenderloin w/ Creamy Gravy
Deer Taco's & Deer Taco Salad
The worlds BEST Deer "Meatloaf" (Twice!)
Deer steaks
Deer Burgers


The list goes on & on & on, etc!!!

[:)]Sorry it's taken me so long to get back on here, Been Hunting & Camping out at the farm soooooo much lately!!!

Here is the recipe! Enjoy! This is awesome.

I've had this (2) nights in a row now!

4 or 5 deer steaks (I used tenderloin cut about 1/2" thick on the bias)

Lightly flour the meat and fry in a little oil, cook em' till there about medium. I like to add a little cajun seasoning while it's cooking as well.

Remove the venison,

add 3 sliced carrots (big peices)
1 onion chopped, again 1/2" x 1/2"
3 stalks celery (sliced)
1 potatoe 1/2" x 1/2"

Season this with salt and pepper, fesh garlic, and thyme, oregano, basil (Italian seasoning) When the veggies are begining to get soft add 1 cup red wine, cook and reduce this mixture until almost no liquid remains.

Add 3 1/2 cups of water
Mix 1 cup water and 2 small packs of pioneer brown gravy mix in a seperate bowl. When the mixture is simmering, add the gravy mix. Stir well. It may be necessary to add another 1/2 cup or so of water.

Season this mixture with salt and pepper. Add the Venison back to the pan, turn to low and let simmer for an hour or so.

Serve it with cooked white rice (AWESOME)

or, try little pasta with it. I promise this dish is incredible.

I'll give this a try, I've Never measured these ingredients while preparing the Meatloaf, but this will get you very close, and it's truly awesome!

2# Ground venison
1/2 cup chopped onions
1/2 cup chopped green peppers
3/4 cups Oats or Breadcrumbs
3 eggs
1/2 jar Meatloaf sauce (Or Ketchup works here also!)

<b>Mix all that together really well, Liberally season that mixture with Garlic powder, seasoned salt, black pepper, and Italian seasoning.</b>

Roll & form this into a loaf, wrap 1/2 slices of bacon over the top of the loaf, top with a little more of the meatloaf sauce (Ketchup)

Cover & bake for 1 hour at 325 or 350, Then uncover and bake until done & the bacon crisps up slightly.

I promise, This Meatloaf won't dissapoint.

[:D] LOL, Thanks. It didn't come easy. Two years in Culinary school, A few years working under a Hard @ss Italian certified master chef, and 4+ years working alongside two of the most talented older southern black ladies that I know. I was blessed in my experience!
