If you have a Rural King close they carry a Con Yeager Summer Sausage kit it has everything you need in it. The kit does 10 pound & has good directions. I would say your spot on with that guess. I'd probably buy a 8-10lb pork butt to grind with it & roll on.Bunch , low ball 20 pound of venison + fat = 15 - 2 pound rolls
