I'd love to try to make my own this year instead of paying to have it done. Do you use have a homemade recipe you prefer or store bought, adding the cheese? It looks really good.

If you have a Rural King close they carry a Con Yeager Summer Sausage kit it has everything you need in it. The kit does 10 pound & has good directions. This way you can try it out pretty easy.

I would say your spot on with that guess. I'd probably buy a 8-10lb pork butt to grind with it & roll on.
