Had a fun pigeon shoot today after the crows weren't working out.

Taste like dove just bigger.. Clean them like dove then over night in salt water wrap with bacon and bake until done or grill them up for the supper bowl with BBQ sauce they will love them until you show them the pics of them on your tail gate HAHAHA.. Tell them there quail or cornish hen breast..

Not sure I'd fall for the quail or hen bit, quite a big difference in taste in my opinion. But pigeon is good stuff, like you said tastes like a big dove.

Pentail, isn't squab technically thought of as very young pigeon in the culinary world? Not criticizing WCT use of term , but just wondering about it?

Squab is indeed a young pigeon. They actually are bigger at that stage, young and tender, then shrink a bit in size as they mature.

It won't make your dinner guests feel any better if you tell them they're eating roof rat.

I did the last bunch we killed on the smoker. They were really good, just marinated some in Italian dressing and some others in honey teriyaki. I got a bunch of quail in the freezer still and probably another 12 pigeons. They will make a good meal at some point! I was aware that squab wasnt really exactly the correct term since those were basically adults I guess. Didn't think anyone wood catch it though! Lol

Yep on the young birds. The ones destined for high end restaurants are grain fed and kept mostly immobile. They grow fat and tender in a short time.

I am of the opinion that squab is before they get feathers and come out of the nest.
When I was a kid I had to climb in bars and get them out of the nest for my grandmother.
Good eating.

your telling us your age now or at least the ones old enough.. When I was a kid I use to help a friend of mine catch and dress them for his grandma she would give us a quater a squab ..
