Sausage seasonings

    I am looking for some sausage and bratwurst seasonings. I browsed a few websites but all the packages are for 25 lb batches. I plan on making 50 lbs of hot sausage and would like to make 5 10 lb batches of brats in 5 different flavors.

    Anyone know a website that sells 10 lb seasoning kits?

    I don't know if they do or don't but a couple sites you might check would be sausagemaker.com and butcher-packer.com

    I make my own pork sausage from pork on sale at save a lot. Made some from pork butts (89 cents per pound) a few days ago.
    Breakfast Sausage, I use Leggs #10 and I mix with high Mountain prairie sage blend. I mix 50 - 50 mix. I use one slightly heaping table spoon per pound of meat, Make mild sausage but lots of taste.
    I add a little extra black pepper and a little more powdered sage . ( I do mean little extra.) Can add red pepper for heat.

    Try tim farmer.com I watched a show where they made sausage. Give recipes for a few other kinds also​

  9. I go to my local slaughterhouse, Farmer’s in Mayfield, and they sell a breakfast sausage seasoning mix for 25 pounds. Bet yours does too. I like mine with extra spice particularly sage so I double up the seasoning. A man really needs to study home blend recipes and figure out his own like grandma and adjust it. I like a lot of sage for starters.
