new to smoking

    I got a smoker for as a gift. It is garbage can type that is straight up with a couple of racks at different levels. A pan for water and the charcoal goes in the bottom. It doesn't have any vents to open to control the heat at the bottom or on the top.
    I want to give it a try with some ribs and a couple of chickens. I'm not sure how I can control the heat. Does anyone any tips to get me started?

    If you make sure that water pan stays full of water, getting it too hot isn't likely. Keeping it hot enough sometimes is. I usually put about a cup of wine in it in addition to water, not sure if it makes much difference. Those things make some great tasting food.

    If you e never done it, Start with some chickens. That way if you mess something up, you're not out much.
