I got a smoker for as a gift. It is garbage can type that is straight up with a couple of racks at different levels. A pan for water and the charcoal goes in the bottom. It doesn't have any vents to open to control the heat at the bottom or on the top. I want to give it a try with some ribs and a couple of chickens. I'm not sure how I can control the heat. Does anyone any tips to get me started?
