My choice also. You can put any bullet in it from 55 g to 120 g and you would need only ONE rifle for Anything. About Any powder will work well in them also. Off the shelf Ammo shoots excellent also.
Old Caliber and gets it done. DRT.

30.06 definitely. No one makes rifles in this caliber and you can’t find ammo anywhere. I know it hasn’t been around long but you’d think more folks would warm up to it. I just don’t understand people!

    That’s my pick also.
Best friend has a 700 In 25-06. He reloads what he calls “meat missiles” And that thing is a bad news

The question was under rated caliber.
30-06 .308 .243 all get plenty of credit and attention.

7mm-08 would be my second response but they have really became somewhat popular and you now hear people talking about that caliber and its advantages

7mm-08. Accurate, manageable recoil, and good terminal performance.

.41 magnum. Red headed stepchild to Dirty Harry's favorite caliber, but is a great caliber in its own right. It was a victim of bad timing and popular culture. I'm just glad I can still find reloading components and some companies still chamber firearms in it. My favorite revolver cartridge by far.

I think a lot of the ones people have listed as "underrated" really fall more into the classics. .30-06, .308, etc. have all been around for a long time and I don't think are going anywhere anytime soon. I think nearly anyone that owns more than one rifle has one is one of the classic calibers. I would think the underrated calibers would be those that to the average hunter, seem rare, but yet continue to persist because of a big enough core group supporting it. Probably something like the .257 Roberts or 7mm Mauser. A few years ago, I probably would've put the 7mm-08 on the list, but I think its being discovered by more and more people.

One that does quite well but that never caught on ?

25WSSM. Shoots identical to factory 25/06 but about half as long of a cartridge. Fits into handy little light rifles... Does a great job on deer sized critters

Another underrated caliber is the .444 Marlin.

7mm-08 is one that I've heard a lot of good things about, my cousin has one and won't shoot anything else. Maybe time to try one.

I'm leaning on 7mm08. But the ammo is harder to find plus exspensive

Have 4 in my house. Got my wife one in 95. My boys were 8 and 10 when i got them one, their first rifle. I got an AR10 in 7-08 two yrs ago. My younger son, now 17, has taken 25-30 deer and two pronghorn out to 375 yds. with his.

Don't know where you're looking, but ammo is no more expensive than other calibers and I've never had a problem finding 7-08 ammo in 25 yrs.

257 weatherby. Shoots like a laser beam, is deadly on deer size critters and very little recoil. Ammo is way high and it is loud but if I want to shoot a lot I have other guns I can play with.

Also like the 280. Better bullet selection than a 270, less obnoxious to shoot than a 7 mag. Wish there were more factory ammo for it.
