My S I L is a good man on the grill, and this week on a fishing trip we did the Alton Brown recipe montreal seasoning and mayonnaise recipe on strip steaks and they were really outstanding . Really seriously good. So good that we did it twice n three nights.

I thought he was kidding when he said he was going to prep and use mayonnaise to Baste mayo on each side to a thickness of about 1/8 inch and then season on top of mayo heavily with Montreal. He did not absolutely pile on the montreal , but the mayo was sort of hard to see under the seasoning. He then let them sit aN hour in refrigerator . Then brought to room temp pre cook.

Then put them on a very hot charcoal grill. Seared each side for a few minutes, and then cook like you would time wise for doneness . We like medium rare , this recipe had a great crust, and was perfect medium rare , and was up with the best steaks I ve ever eaten anywhere. And that covers a lot of famous great steak cooks and some fancy ones in th big cities.

Would this be good on chicken? You have my attention, my grill is hot and chicken breasts are on the counter for lunch

Her mayo is some kind of healthy avocado crap but it grilled up just the same.

i dont know why the mayo would help but the chicken held more moisture than normal.

Thats fair and i offer no argument. My first post wan an honest question and on topic, then it went south. The mayo Montreal season method did well on chicken as well though. Its funny because i love cooking good tasting food for the family and trying to make it healthy has been a challenge and at times downright pisses me off.

you hopefully knew I was kidding... if you like a spicy good grilled crust on meat this mayo /montreal method should work fine on about any meat you would put on a grill. Try this deal on steak and tell us how it works.

Particularly a non-meat. I cant make fun of him though. I literally had the Bacon out, then put it back and grabbed the avocado so i have noone to blame but myself. And Bee i will attempt to redeem myself with some steaks.
