I carry a case three blade when I’m off work, that I bought at a do it best hardware store in Glasgow in 2011. When at work I have a cheap knife that a former asst fire chief gave me when I got my EMT license in 2012. For deer I use a mossy oak knife kit my wife got me a few years back. For fish I use a set of I think Mustad Kevin Van Dam fillet knives.

As much as I love knives you would think I am skilled in sharpening them lol but that is sadly not the case. Free hand? No way in hell. I depend on little gadgets to get them pretty sharp...enough to shave ya if you wet the hair....but not scalpel sharp. I may invest in a strop
I have never used a “strop” till two weeks ago. Been sharpening knives my whole life. Sometimes I get them sharp free hand sometimes not so much. I’ve used gadgets here and there that will make a knife usable but nothing I would consider scary sharp. The last couple years been using a Work Sharp sharpener with good results. I decided to strop a knife fresh off the Work Sharp using an old leather belt I had hanging in the garage. This is the first time I have had a knife that was scary sharp. Never knew what I was missing till then. I’ve been going around sharpening and stropping every knife I can find around the house. It’s incredible the difference it makes. Try it on an old belt if you get a chance.

I carry a medium size case stockman now.I always carried a large case stockman ,when I worked,in the mines for splicing cables and things .I carried a four blade boker when I made turkey calls,it had the right size blades for carving and scraping.I carried a handmade knife I made ,when deer hunting, made a knife and hook to bone deer out,but never got to use it .I always use two diamond sharpeners ,about the size of a small pocket stone ,with a medium ,and a fine grit ,then leather strop with red or white buffing compound.

For field dressing deer I use either a Gerber Gator fixed blade or a buck 102 it depends on which pack I'm carrying at the time. I used a Kershaw 3 inch blade folding knife for about 15 years it's still in my back pack but it never comes out. Its there for or luck or mojo what ever you want to call it.

For processing deer I use a 5 inch Chicago Cutlery boning knife and an outdoor edge field kit

For squirrel and rabbit hunting I carry a Case XX stockman's knife

Buck 112 in my pack for deer hunting. Daily carry is an old Case XX (either mini trapper or copperlock).
I have lost every case i have ever packed for daily carry. Don't get me wrong I hate losing a $40-$60 knife. I bit the bullet and bought a bench made earlier this year cause I know i will keep up with it. I remember 22 years ago I was buying a pair of Oakleys and my wife couldn't believe I was paying that much. I always thought if I lose a pair of 10-$25 glasses no big deal. 22 years later I still have my Oakleys.

Benchmade for every day use. Havalon for gutting, that thing is surgical. Makes short work. Blade gets dull and pop another brand new one on. Been a game changer for me.
