Skinny I will be sure and tell her, I know she misses talking with you. I have been using chunk wood in my smoker and when the smoke plays out I take them out and put in a metal bucket. I then place foil over it keep the oxygen out and I am left with some nice chucks. I may have to upscale it at some point. Thanks for the info.
just took my boston butts off. 195 temp. the bark is great. the smell is unbelievable. so tender a week old baby could eat it. sitting here in some foil now resting after 16 hours on the smoker.
going to be dangerous around here before long.
We worked in the yard and garden all day yesterday and decided to do something simple for dinner. grousegal made up some elk burgers for the grill and I started sautéing some shrooms on the side burner ... A little later with a slice of Swiss cheese and some horseradish sauce, we had some great elk mushroom & Swiss burgers with some baked fries and a cold Leinenkugel's Canoe Paddler on the deck. Pretty good eatin for a quick throw together meal.
Now we're working on getting ribs (using a Pentail recipe I found here from July, 2013) and BBQ boneless thighs ready for the grill, with some grilled corn on the cob, cole slaw and picnic salads for a family get together with the kids and grand kids coming over in a couple of hours.
Smoked ribs, baked beans under them to collect the juice, grilled corn of the cob, jalapeño corn bread and few of Americas favorite adult beverage for us.
Been out and about most of the weekend. Had some bbq pork at a friends shindig. Got home late last night and grilled some cheddar bratwurst. Got up at 6 this morning to get some baby backs going. Going to try smoking some corn on the cob and beans to go with it.
But today I'm cooking..... put the meatloaf in the smoker before noon with a mix of hickory & cherry. Got some mac-n- cheese & baked beans to put in later this evening. Also firing up the grill for a few brats that my daughter requested .

My weekend cooking was a bust. Dang heating elements kept tripping ground faults. Made it reddish on outside but no smoke ring, had to finish in oven. Gonna toss the elements and either add a propane kit to it or weld up a 16"x12" 1/4" thick charcoal/wood box, probably the latter
