I've had this (2) nights in a row now!

4 or 5 deer steaks (I used tenderloin cut about 1/2" thick on the bias)

Lightly flour the meat and fry in a little oil, cook em' till there about medium. I like to add a little cajun seasoning while it's cooking as well.

Remove the venison,

add 3 sliced carrots (big peices)
1 onion chopped, again 1/2" x 1/2"
3 stalks celery (sliced)
1 potatoe 1/2" x 1/2"

Season this with salt and pepper, fesh garlic, and thyme, oregano, basil (Italian seasoning) When the veggies are begining to get soft add 1 cup red wine, cook and reduce this mixture until almost no liquid remains.

Add 3 1/2 cups of water
Mix 1 cup water and 2 small packs of pioneer brown gravy mix in a seperate bowl. When the mixture is simmering, add the gravy mix. Stir well. It may be necessary to add another 1/2 cup or so of water.

Season this mixture with salt and pepper. Add the Venison back to the pan, turn to low and let simmer for an hour or so.

Serve it with cooked white rice (AWESOME)[:D]

or, try little pasta with it. I promise this dish is incredible.
