    Supper tonight for the wife and I crappie I caught in VA.this spring washed in weisenberger fish batter and rolled in cornmeal, Sweet hush puppies from the Carolinas and fries m.. resize1578438961699.png

    Try them rolled in KY Kernel Flour. So good.

    Question for ya, how do you keep your fillets? I tried freezing some bluegill in water & they basically fell apart when thawing, tried flat freezing & then bagging some & they freezer burned VERY quickly.... Any suggestions?

    My old man has always froze the whole fish in water(well when he doesn’t clean right away). I don’t know what’s what on a lot of things but can promise he’s one of the best fish cooks I’ve ever known. He doesn’t fillet panfish very often (I do).

    I freeze in water, have always done so and have never had a problem. Did you thaw too quickly using warm or hot water? If so, this can cause the filets to turn mushy. I recommend thawing in the fridge over the course of a day or two. Hope this helps.

    I freeze panfish in water. Bass and catfish get vacuum packed. Never had a problem. If they are freezer burning, you're not getting the air out....

    This. Thawing too quickly will turn the fish to mush.
