    Research “spatchcock”. Cooks evenly and takes less time. Essentially you cut the back out and flatten the bird out.

    That’s how I smoked mine today.
    4.5 hours at 240
    It was perfect.
    Old Raspy that bird looks great, I’ll have to try the honey glaze.
    Brining Turkey or chicken is the only way to go.
