Goose breast makes great jerky. Treat it just like deer meat, texture is a little different, but very good.

I made some goose jerky last year, not as good as deer, but still ok. Congrats on the band too, lets hope there are some more down there.

We snuck out Tuesday evening and shot 4 more honkers, no bands. Another group of 15 or so came into roost right at last light. Saw another group of 50-60 get up from feeding on the horizon but they never payed us any attention.

I make goose jerky every year, and its great for using up those extra breast laying in the freezer. It taste fine when your out in the field just wishing you lived in Arkansas.
