    I’ll second the Cutco knives. They have a filet knife that will extend and contract to allow you to adjust the length of the blade. Excellent warranty and service also.

    Another vote for Dexter Russel. Easy to sharpen and hold a good edge for awhile. Once you get used to it a stiffer blade is where it’s at. I have had bubba blades as well, they are coated to allow for easy slicing but once the factory edge wears off they don’t sharpen great and are no better than any competitors.
