Cajun or blackened recipes

    Looking for some good recipes to try on catfish. What are you using and how to prepare it. Cant wait till they start biting so I can get me a mess of em.

    Found this several years ago and been using it ever since for blackening fish in an iron skillet.
    1 tbsp paprika
    2 tsp dry mustard
    1 tsp cayenne
    1 tsp cumin
    1 tsp Black pepper
    1 tsp white pepper
    1 tsp dry thyme
    1 tsp salt
    1 tsp garlic salt

    Put in an air tight container and let it sit a few days before using. I coat fish pretty heavily with a well oiled iron skillet. this recipe also said dip filets in melted butter before coating. You’ll be very impressed hopefully like I was

    I rub the fillets down in butter and I use Paul Prudhomme's blackened seasoning. Get an Iron skillet white hot cook on both sides until done. Doesn't take long.

    I did some blackened fish last summer. I just pulled up an online recipe then used as many items as I had in the spice cabinet. Turned out great.

    I got a new cast iron skillet over the holidays and I'm looking forward to some good meals of fresh fish

    Keep your windows open or do it outside! Those torched spices will have you hacking, coughing and horking before it’s all said and done. Every person in every room in the house will have a fit of coughing and carrying on!
