Got my workshop up and at least functional. First time having owned actual wood working tools. I have started kitchen cabinets for the Barn but did this to get my feet wet. Its a cabinet for making African Biltong or anything else really its just a dehydrator. I will hang it on the wall with big hunks of meat drying! It has a computer fan pulling air through the cabinet and I have a UV light if I need it as well as adding a light bulb if I need a heat source.
Friends that have been on safari have all had it. The natives hang the meat in trees, Ostrich is common I guess. They put it in a vinegar wash then salt it and season with Black pepper and ground coriander seeds, is typical. It looks like it'll be ready tomorrow.
Jerky is dried meat. Plain and simple. The heat that is used in dehydrators should not COOK your food. We have all had Jerky that has been cooked...its crunchy and brittle not chewy. Also not very good. I did try some today and it was good but would have been better if it was saltier. I really didn't want to over salt.
