Me too! I can eat fried taters 3 times a day!
All they need is a big slathering of some sort of icing.

Here's the original recipe:
Fruity Bran Muffins
1 8 ¼ oz. can crushed pineapple, drained
Milk plus pineapple to equal 1 ½ cup
1 ¼ cup flour
2 cups bran cereal
¾ cup brown sugar
1 tbsp. baking powder
½ tsp. salt
½ tsp. cinnamon
¾ cup grated carrot
1/3 cup oil
¾ cup raisins
½ tsp. vanilla
Mix well. Bake 20 minutes at 400 degrees. Makes 18 muffins.
However.... I usually use a pint jar of mock pineapple (made from zucchini) in place of the crushed pineapple (and don't drain it at all) & roughly double the rest of the ingredients, don't add the milk unless it just looks too dry, sometimes use All-Bran - sometimes use Grape Nuts, sometimes use applesauce instead of oil (I like that better), sometimes use craisins or even dried cherries in place of raisins.... It's a pretty flexible recipe. Don't think I've ever made them the same twice - LOL!
I've thought about making a cream cheese frosting to go on them as desserts.... Mmmm!!!!
Oh and I usually add a cup or so of chopped nuts.
