Smoked, blackened grilled fish tacos today.

I used both fresh salmon and frozen tilapia fillets from Walmart. Thawed the tilapia and blackened seasoned everything. Pellet grill to 325, the firebox on my grill is on the left side, so I put the thicker salmon fillets on that side and the tilapia on the right.

I'm cooking to 145 internal, so when the salmon got there, the thinner tilapia was at 160, but it was still great and not dried out, I actually liked the tilapia a little better, it's not quite as "fishy" as the salmon.

Finished them out with some shredded lettuce, cheese, cilantro, squeeze of lemon, and some Kinder's chipotle lime sauce. They were 🔥.
