    I have a friend that owned a grocery store and a restaurant. He sold a lot of Uncle Charlie's tenderloin biscuits every morning in the restaurant. So many that he wanted to be able to use the cheap whole tenderloins he got through the store instead of paying a premium for the boxed Uncle Charlie's brand.

    My buddy did a little research on his own and learned that pineapple and papaya both contain enzymes that tenderize meat quickly. Pineapple contains bromelain, and papaya contains papain. He ended up using either fruit from his grocery produce section that was about to be tossed to tenderize pork loin for the biscuits in his restaurant. He said after years of selling those tenderloin biscuits nobody ever knew.

    This picture simply doesn’t due justice, So I’ll take you on the journey. The discounted pack of boneless thighs called my name and ended up at home. In the back of the fridge I discovered a jar of garlic stuffed olives that only had one or two survivors left in it. After slicing up the thighs that became a brine and they soaked for three solid hours. Next I had to figure out my breading, I went through the chip cabinet and found two old sorry bags of cool Ranch and nacho Doritos. After pulverizing those i added this random half empty bag of hush puppy mix I found in another cabinet. After pulling chicken from the olive brine i lightly dusted with some Everglade seasoning i tossed them with that Delicious southwest hot mustard I bragged about earlier. After a vigorous shaking inside a brown paper sack the wonderfully encrusted strips went straight into some bubbling lard.

    I can go for everything but the DIET coke. I’ll drink well water before I drink anything without sugar or caffeine, preferably together.
    Looks great. I’m still eating ham and turkey leftovers, probably will be for a week.

    We used to buy Uncle Charlies tenderloin in a bucket and they were good. Here lately we have been buying the boxes of Uncle Charlies tenderloin vacuum packed and they are not very good.
    If pineapples tenderize regular tenderloin, then I may give that a try. Do you just add pineapples and marinate and how long?

    One, medium fresh pineapple pureed will do about 5 lbs. or more of sliced tenderloin. Add a couple of tablespoons of salt to the puree and marinate slices overnight in the fridge. You can experiment on the marination time and salt to suite your taste, but that's a starting point. If you try it let us know what you think.

    Breakfast at 12:00 today. Went out fooling around with my cattle and came in hungry like always. Some iced tea, coffee, bacon, homemade sausage, fried bologna, homemade biscuits and homemade pancakes with simple syrup.
    I know I should not be eating like this but every now and then doesn't hurt.

    Red Kool aid with Vienna or potted meat sandwiches, it's one of the tastes that imprinted on me from childhood. My mother's fault.

    Cold hamburger and warm milk, school's fault.
