Yesterday was one of THOSE days so last night was a venison fajitas & margaritas on the deck kind of evenings!
Got brisket burnt ends going in the smoker but doubt they'll be ready by tonight... Probably won't get to dig into them until tomorrow.
About to finish the tenderloin up. Talk about tender after marinating in pineapple for 48 hours!
Had some eggs as well. No loin though

First time cooking hanger steak but won’t be the last. Bought $9 of hanger from Critchfield on southland in Lexington today and grilled over charcoal. Salt, pepper, garlic AND dale’s .

What is hanger steak?
Hanger steak is sometimes called a butcher’s treat or something similar. It comes from around the diaphragm of the cow. I think there is only one on each beef. It has tenderness of filet but has the texture ahd flavor of a ribeye. I was looking at the picture of the package I bought and it said that it was $9.79 for 1.29lbs. Pretty reasonable.
About the same as a skirt steak but a lot more tender. Hanger is a very tender cut in fact.
