I've never tried paddlefish, what did you think about it?
It’s awesome. For me it’s right behind flathead belly meat. The texture isn’t like any fish you’ve had. It’s almost like chicken cutting it up. And I’m pretty sure you could trick a lot of people into thinking it’s chicken.

Never trust someone that reaches for chicken breast meat over a thigh/leg! That's my motto lol

As I was frying some rabbit, I remembered I need to ask ya'll something. For years I pull the fat off of rabbit. The past couple years I have left it on. When eating, it just melts away or is tasteless. I dont think I have ever seen it after cooking. Does it render out?
