We did some pretty serious eating here this weekend! Started out Saturday morning with trying a different take on biscuits:
They were "okay" - probably not something we'll try again - but they were mighty tastey with gravy piled up on 'em!
Then for dinner that night, I paired up leftover shrimp & asparagus scampi with medium rare venison backstrap and a green salad with cut up fruit salad for dessert:
Yesterday, we finished off the biscuits & gravy from the day before (it's hard to cook for just 2 of us without having a ton of leftovers) and then we hauled out the cast iron pizza pan. Hubby made the crust and I did all the toppings (grilled chicken, mushrooms & spinach) as well as made a super rich garlic-alfredo sauce for the base. It turned out DELICIOUS!!!!!

Oh yum!!!! Fried pies are one thing that we've never managed to perfect... Either the dough isn't right or we don't get them done enough or we get them too done. I've about given up on the ones I remember as a child. I loved election day back then because someone ALWAYS had a bake sale set up at the polling location with fried apple pies, old timey peanut butter rolls, homemade fudge, stack cakes, etc. for sale.
For sure I feel the darker the yolk the better the taste.
I've never fried chicken quite like this before, and it won't be the last time!
I brined some leg quarters overnight, seasoned em, then just lightly dusted with flour and deep fried it in a Dutch oven. Crispy, juicy, flavorful perfection!
It amazes me u produce these meals year around. Even in summertime when u r the busiest. Looks great!
Putting the brine on poultry and pork is a big time secret that makes all the difference.
I only know of one older lady in the whole county that can make good apple pies lol. She was my 1st grade teacher and if the class tested well she'd bring a chit load of pies to celebrate lol.
