At What Tempratures do Deer Begin To Spoil

    When we killed hog we would lose meat if it rained too much with the temperature getting up. Seems the extra high humidity kicks the spoilage into high gear.

    Humidity is about worse then temps concerning meat.

    They seem not to spoil to fast. You see them stacked up at processing places laid out in the yard or concrete in the heat before they skin and cut them up.

    No joke! They just flew out of a porta-can and land on your food with mustard on their feet!

    That is why I had the gut cleaning that you have to go through to get a colonoscopy. I wanna keep all the bacteria that I have built up over the years.

    Worked them up yesterday. Was so tender the hams was coming off with the skin had to be careful to not pull the hide to hard. Good eats.
