Had to pick up a few groceries yesterday after an eye doctor appointment so I ran into the Aldi's in Frankfort. I always check out their "special stuff" aisle & right at the end of it, I spotted these mini cast iron dishes & just couldn't resist! Got home, got 'em washed up & started looking for recipes. Found one for "million dollar spaghetti" that sounded intriquing but it was for a 9x13 baker. So I started guessing. Downsized it, swapped around a few ingredients that I didn't have on hand (including a jar of homemade spaghetti sauce with meat in place of a ton of their ingredients), layered it all together & popped them into the oven! Y'all, they came out "slap yo momma" good! My husband approved & was immediately helping me come up with other ideas to fix in them. Now I just wish I'd picked up a couple more! What would you all fix in dishes like this (or in teensy tiny cast iron skillets - since I've got a stack of #3's - roughly 6" across - that aren't being used)??????
I have a set of mini loaf pan for those - as well as a couple of old french roll pans that make itsy bitsy little loaves.
