    All the great post JDMiller has teased us with. I just hope I do them justice.
    Couldn’t find JD’s post on what model he had but remembered he had wifi.
    This is a pro 575.
    6.5 pound bone in butt. Rubbed down with Kroger dry pork rub. Apple pellets @ 225.

    Congrats on the new Traeger!!

    I got the Pro-780 which is the same unit as yours just a tad bigger grill area is the only difference. Which me and the wife talked about getting one for months... I hated to spend that kind of money on a smoker / grill and she kept telling me to buy whatever one I wanted. So.. finally pulled the trigger last fall ... and no regrets so far.

    My old Masterbuilt ... I’d have a tendency to over smoke things on occasion. Now with the Traeger really no such thing. Pretty much set it & forget it.... which I do a lot of smokes through the night now. Just make sure the hopper is full of pellets before I go to bed and let the Wi-FY send me alarms if something changes.

    I've actually just chopped bell peppers tonight and laid out the ingredients to make a smoked meatloaf tomorrow. Mine runs almost every weekend .. did brats & burgers last weekend. Not too much you can’t do on these things with all the temp control.

    Butt came off at 10 hours and rested for 1. Really the ease of this little unit is nice. After wrapping at 160. Took the wife to Blue Licks to find a concrete frog for her rock garden. Bet not many of you have shopped for a concrete frog LMAO. Anyway 20+ miles from smoker. The phone keep me up to date on what was going on in smoker. The smoke ring is impressive for no more smoke that comes out chimney. The apple was spot on. Finished with himalayian salt and drippings mixed with hot vinegar.

    Everyone sat down to:
    Pulled pork, candied carrots, Fortex beans, foil pack of potatoes, zucchini & squash, grilled head cabbage. Little Montgomery inn (on the side always).
    For me any bbq (pork, beef or fowl) is dressed with pickled onion and tart dill pickles.

    I remember those big Fortex beans from way back. After you mentioned them last year I ordered some for this year.
