Holy Camoly , That's as fine as it gets. You did have the au jouis & horseradish?

  3. No horseradish but the au jus in the recipe is the bomb. It has a flavor that kind of reminds me of old school KFC gravy.

Farmer done one while back that looked good. He used a different cut of meat. Don't remember what it was. Said you couldn't tell a difference between the two. I've got it saved. I'll look it up.

Sounds like a "Top" Boneless Round Roast that your Farmer Friend used. That cut is a good cut and also very lean. I roasted one a couple weeks ago in an uncovered roasting pan, until it was medium. I then sliced it thin with my electric meat slicer. It was juicy and tender.

  10. Yeah that's what I'm looking for, a cheaper cut that is close.

Yep, Krogers & even Walmart have this cut of beef (boneless top round) roast more often than the prime rib roast. If the roast is excessively lean I melt about 1/2 cup of "Smart Balance" and inject it into the roast and rub the rest over the roast with seasonings. I prepare venison boneless roasts this way too.
