I sear in hot olive oil and butter i only season with garlic, sea salt, and a little red pepper. I like to add onions and mushrooms. Same as above. Trim all the fat off and valves. I roll mine in flour and fry in bacon grease. Salt pepper garlic. Put on homemade biscuits and make gravy outta the grease in skillet.
I have 2 to cook up after last night's hunt and they will be for lunch. I like battered and fried pretty good but I dont think you can beat grilling it rare. Put some Cavenders on it, run it in, place on very hot grill for 2 mins on each side....delicious.
I cant explain it but the texture of it grilled is strange but very very good.

Not mandatory but I often soak in saltwater brine overnight or longer
