Anyone out there have a recipe for backstraps that doesn't include frying or grilling, (sorry guys). I have diverticulosis and can't have spicy foods, seeds, nuts, white bread, etc. You get the picture, when I got this new diet I felt like putting a gun barrel in my mouth. Thank god I can still have wild game! Thanks for any help with the recipes.

i take some bbq sauce and cook it in the oven on 325 for about an hour and thirty minutes. makes it nice and tender and it taste like pulled pork.

Define "spicy". You mean like just hot sauce or ANYTHING with some tang to it?

I'm not suppose to have anything with tang in it but if it doen't burn my mouth, I eat it. I'm not suppose to have anything with caffine either but I'm not giving that up, gotta have my coffee!!

Place strips of bacon over the backstrap and roast in a 450 degree oven, 20 minutes per pound. Remove the backstrap and deglaze the roasting pan with one cup dry red wine and one cup stock, add raisins and dried cherries (a handful or so), and cook down until it makes a sauce consistency. Put the backstrap on a heated platter and pour the sauce over top, then slice across the grain.
This works great with a pork loin, by the way, or with roasted or smoked wild duck. You can use bourbon instead of the wine if you choose.

It's funny you should bring this up. I was just diagnosed with diverticulitus on monday. The diet the doc gave me is a bit different than wht you mention. I can have white dread but no wheat bread. Also said nothing about caffeine, says I can drink anything. Spices are out of the question, but the diet says nothing about not eating grilled foods, just notheing fried(which really sucks). Now with that said, I don't have the pockets related to diverticulosis. I just have an inflamation caused by bacteria or something. I sometines take the backstrap, cut en inhalf so I have 4 pieces. I then put em in a ziplock with lemon pepper or my favorite BBQ sause. I let them set in the fridge a couple days then freeze em til I'm ready to cook. I let em thaw and throw em on the grill, key is cook em rare. I also put them in a cooking bag and bake them. They are gooe either way, but much better on the grill. Slice em and serve em like the pre marinated pork loins from the grocery.

You do have diverticulosis, when it becomes inflamed it is called diverticulitis. The pockets are called diverticuli. It sounds like the doctor has you on a low residue diet to clean out your colon. My geuss is you are on antibiotics as well. You will be on the low residue diet for awhile then they will put you on a high fiber diet probably for the rest of your life. I have to take citrucel for the rest of my life. I've had this for four years, and ended up in the hospital twice. The second time because I wasn't following my diet. The funny thing about this is everyone over the age of 80 has it and I'm only 42. Italian cooking did me in. You can say goodbye to popcorn, seeds (this includes any fruit or veggie with seeds unless you take them out), nuts, spicy foods, you will have to cut back on the coffee and drink lots of water. You can find out more about it on the net. That's how I learned more about it, my doctor didn't tell me much about it. He just called it a "pus pocket".
