Hey Fellows can any of you tell me what you think is the best duck to eat and PLEASE TELL ME HOW TO COOK A DUCK <img src=icon_smile_question.gif border=0 align=middle>

The best I've had was mallard marinated and grilled. Wood duck also tastes pretty good this way. Close second is marinated, floured and fried.
Here's the best receipe I've ever found for duck. It's absolutely one of the best meals I've ever had. Good luck.
Jalapeno Duck Marinate
Ingredients:
Duck or Goose breasts;
1 large jar of Jalapeno Pepper slices (& liquid);
Bacon;
Teriyaki glaze;
Honey
Directions:
Prepare wild game by cutting into 2" cubes, then butterfly each cube thinly. Put the prepared meat into a gallon size zip-lock bag and pour the entire jar of Jalapeno Peppers and liquid over the meat until covered. Let marinate in the refrigerator 3 to 6 days, turning the bag over every 24 hours. The longer you marinate the meet, the better and more tender it becomes.
After marinating, wrap each piece of meat with half a slice of bacon and secure with a toothpick. If you like your food spicy, you can put one slice of pepper inside before wrapping with bacon.
Grill meat over medium-high heat so the bacon gets done but the meat stay medium. When the bacon gets done, apply Teriyaki glaze but be careful not to burn the meat.
Immediately remove from the BBQ and take to serving platter. Drizzle with pure honey and serve! You've just served your absolutely best wild game anybody's ever eaten.
