...just got into making jerky...and have had good luck with it...although it is drier than i like.....my question is.....how dry is safe????...i like it a little chewy but dont have much knowledge on it....so when is it done and safe to eat?
take nothing but trophies.....leave nothing but gutpiles

It should be completely chewy, we put it in the oven to make sure its cooked for like an hour with the door open then transferr it to the dehydrator
