They're easy to hang by the back legs and skin too.I dont recommend that if your gonna deep fry it though.

The legs and thighs are real tough. I just skin back the breast and fillet the meat off. If I'm in the mood for some dressing, I'll go ahead and cut off the legs and thighs. Boil em real long and pull the meat off and mix it with your favorite cornbread dressing mix. Thats about ther only way I've found to make it chewable!

Most of the turkey isn't edible, so I just breast them out. Just d it like any other bird, such a duck or dove. Takes maybe 3 or 4 minutes and you have the meat that you can use.

Ditto on the filet. First turkey I got, I pulled the feathers, followed a recipe out of Field and Stream that roasted it like a thanksgiving butter ball and it was darn near the worst thing I ever ate. Now I fillet them and makes all the difference!!
Fillet the breast off of the bone. We have also tried eating the thighs but found out real quick that the breast is by far the best part. Just lay the bird on its back, peel away the skin, and fillet the meat off much like you would a dove or duck.

I take the whole breast (remove the neck, wings, and legs) and I inject them with my homemade marinade- here it is. Melt one stick of butter, about 10 shakes of worchestershire sauce, 10 shakes of soy sauce, couple shakes of finely ground red pepper, couple shakes of garlic powder, about 3/4 cup of brown sugar. Mix and heat about 20 seconds in the microwave. Inject the mixture into the breast. Then I use a very hot all purpose rub that I get at the grocery store which I rub all over the outside. I don't know the name of it but it is in a white package with red lettering and it is in the cooler section. Bake the turkey normal uncovered without a bag. If you do it right it will be as juicy as those deep fried turkeys everyone raves about but it will have a wonderful spicy taste. I have never had a bad word about my turkey, even with wild ones I cook.

I take the breast out still on the bone. You can either deep fry it or smoke it. I've tried to eat the legs but would rather try to eat one of my boots!

Take the breast, as Multi said about a 3 minute job and the only part fit to eat.

My aunt makes some mean turkey dumplings with the legs and thighs. Dont know her recipe but she uses a pressure cooker and cooks the living crap out of the turkey. Other than that, I am a breast man.
