since I'm now blessed with all tools to 100% process ALL my game, I now have the ability to make my own jerky since the addition of a buddys new & never used dehydrater. Question is (since the manual is long, long gone) There are vents on the top, Do I leave them open, closed, or in between? Probally a silly question I know, but.........

PB, the one I have only has small slits in the top. They are a full circle about 1/16" wide. I think you would want very little ventilation.

Th one I have has the slits like you have to either open or close. I have made 10+ batches in my new machine and here is what I have found. If you leave the vents open the jerky will take longer to finish and be more dry and crispy as the opposite it will be more moist and chewy. I like mine either way so I have been mixing it up. Try it crunchy if you haven't it's not bad.

Perry, you need to have some ventilation to let the moisture out or it will look like it rained inside and your jerky will mold if not used quickly. If you do not have a jerky gun you should try one. It is much easier to use ground venison. You can also mix in your favorite stake sauce or BBQ sauce with the ground venison. It adds alot of flavor.
