anybody got a good jerky recipe they want to share? I usually buy the mixes but I'm willing to try something new. Does anyone know if you have to use the jerky cure or can you just marinate the meat and dry it?

I have never used any cure on mine. My mix is really simple, 1 part soy sauce, one part liquid smoke. Cut meat into strips, soak over night in mix then dehydrate or stick in oven on lowest setting till dry. Before I cook or dry it, I will often sprinkle on some lemon pepper seasoning and garlic salt to taste.

1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup worstechier sauce
2 tbs. liquid smoke
1 tbs. chili powder
1 tsp. garlic salt

marinate meat 24 hrs in fridge
sprinkle w/ black pepper before dehydrating

I didn't claw my way to the top of the food chain to become a vegetarian!

1lb. lean meat
1/3c. water
1/3c.soy sauce
1/2tsp.garlic salt
1/2tsp.black pepper
1/2tsp.liquid smoke
1/2tsp.red pepper
Slice meat thin, like bacon removing asmuch fat as possible. Combine ingredients. add meat in a sealed bowl, and soak overnight remove meat dry with papper towel(and place on cookie sheet place in warm oven at 150 degrees for aprox. 4hours until meat is dry not hard) or use dehydratorstore in frig or freezer and enjoy jerky on your nexthunting adventure.
Hope you enjoy it's my grandma's secret she is revered by hunters and cookers alike for this receipe( with all that pepper makes mildly spicy jerky)

What about using ground venison thru a Jerky shooter? Any recipes for this?

Thawing 10# right now to make a run O' Jerky!!!!!!

1/2 cup water....1/4 cup soy...1/4 cup teriyaki...1/4 cup worchisheshtershishtershire...1 tsp black pepper....i tsp garlic salt...marinade 1 hour....everybody says this is just right, not too stout, not too bland, just right

take nothing but trophies.....leave nothing but gutpiles

that recipe was what i came up with after looking at 1,000's of jerky recipes and then coming up with my own.....i have made only one batch of jerky ever and everybody loves it....i will make more of that recipe when we eat all of this batch

Whostishire (dont laugh) I cant spell.1 cup 1 cup water and Alex Patouts cajun seasoning.Marinade in sause and water dri then sprinkle with cajun seasoning.
All it has in it is salt'white pepper'dlack pepper'red pepper and garlic.
Almost out and cajun gro don't sell it anymore.I checked all over the web and no luck so Icalled one of his resturants inLa.Waiting for them to call me back now.Will let you know if I find it.
