I use a box kit and a large jar. Takes about 30 days to complete the batch but if you age it 6 months it is better than any I have ever had. Chianti is the best to make sweet yet robust.

Do a web search for wine or winemaking and you'll get more results and info than you want. Speaking of wine, I've heard some old-timers say that persimmon wine was the best. Anybody ever tried any?

Wine recipe makes 5 gallons.

To start you need a few supplies, you need something to make the wine in. I use a 5 gallon spring water bottle (a clear bottle if possible). You can pick up one of these at the local spring water bottler. You will also need something to mix the wine up in at the start of the process. I use a small plastic garbage can (about 3 gallons). Next, you need some type of strainer and a big funnel. You can use a common household strainer or some type of cloth. I use both types of strainers. You will need some type of cloth to cover the garbage can when making the mash (an old, clean pillow case works well). I also use a large rubber band to hold the cover on. This will keep the bugs out.
Now we get to the good part. The first part of the process is making the mash. You need to decide what kind of wine you want to make. Once you decide what you want to make, you need to get some fruit. You need about 1 gallon of fruit to make the wine. You will also need 5 pounds of granulated sugar and 2 packs of yeast. Put the sugar in the garbage can, then pour in the 2 packs of yeast and stir it a little to combine it. Now you need to stir in about 2 gallons of water. I use lukewarm water and a big spoon to stir the sugar- yeast mixture to ensure that it gets completely dissolved. After this is done, you need to add the fruit to the mixture. You need to cut the fruit up into small pieces to allow the juices to escape into the wine (to get the flavor). Once you get the fruit cut up, add it to the sugar, yeast, and water mixture and stir it up a little. Then cover the can with your cover of choice. You need to stir this mixture about once a day for 7 to 10 days. If you miss a day or two, it will still be alright.
Now for the next step in the process, get the 5 gallon water jug and the strainers ready. You will need 5 more pounds of sugar and 2 more packs of yeast. Using a funnel, put the sugar and the yeast in the water bottle and add about 1 gallon of lukewarm water. Mix sugar, yeast, and water to dissolve the sugar and yeast. Get the garbage can with the mash mixture, the strainer, and the funnel. Put the funnel in the water jug, then put the strainer into the funnel and pour the mash mixture into the water jug. The fruit will be strained out of the mixture and the liquid will go into the jug. I use cloth to strain because it gets most of the fruit out of the wine. Once this is done, shake water jug to mix mash liquid with the sugar, yeast, and water mixture previously put in jug. You should have about 3 to 3 ½ gallons of liquid in the 5 gallon jug. Take some kind of cloth and put over the opening in the jug. Put a rubber band around it to keep the bugs out. Wash the garbage can for use later. Wait about a month.
The final step is very similar to the previous step. You will need 5 pounds of sugar and 2 more packs of yeast. Put sugar and yeast in the clean garbage can and add about 1 gallon of lukewarm water. Stir mixture until sugar is dissolved, then add this to mixture in 5 gallon water jug. Shake jug to combine the ingredients. Fill jug the rest of the way with water and put cloth and rubber band on it.
Now all you have to do is wait. The wine will be ready in about 4 or 5 months. It will clear up in the jug so you can see through it. The longer it sets the stronger it is.

If you have any ?'s let me know.

You can also siphon the wine out of the can into the water bottle. You will still need to strain it though. You can be creative with your choice of fruits too. I've made strawberry-banana and strawberry-kiwi-banana most recently. If you don't like your wine very sweet, you can also cut the sugar down to suit your tastes.

Now how about that recipe for making moonshine. Seems I remeber a law that makes it legal in most states to make 25 gallons a year for PERSONAL USE. And right now I could personally use some!

I don't have a good shine recipe but I'll ask around and see what I can come up with. As far as the law, I'll have to do some reseach on that too.
