Shot 80 rounds through my new 1911 Saturday. One handed was pretty good, horizontally it was right on, was just shooting a little to the right. Strangely enough though, shooting two handed was horrible, was all over the place, and the only consistent thing was that I was way low, like a foot low. I was using the Weaver stance but my left hand was under the gun holding it up. Am I supposed to pull back on it? Is my left hand supposed to go over the grips and my right hand? Could it be something else? Right now I'm lucky to be hitting the paper.

You need to have someone who shoots show you proper technique and grip. Maybe go back to the gun shop and ask them to show you a proper two handed grip.
Try this too.

You also need to have a friend watch. He can notice you making changes between shots that you might over look. Make sure your consistant from shot to shot with your stance, grip and trigger pull. Follow through with your trigger pull let the gun recoil before you let off. Rest a second or two between shots (lower the gun).
Start out close to your target, like 10 yards, practice your stance, grip (two handed always) and trigger pull, build your confidence then move back 10 more yards.
Watch you front sight all the way through the trigger pull.
When you start seeing consistancy in your goups then worry about weather its hittling low.
If you dont have a adjustable rear sight you have four choices.
1 Get a shorter front sight
2 install a adjustable rear sight
3 Shoot lighter weight bullets
Last resort
4 File down the front sight ( which I have had to do before)
Did I mention consistency?

For the time being I'll just shoot one handed or grab my shotgun that I've had for 25 years... it never misses ANYTHING... especially cats. :D
This is my first pistol, I don't know jack about it. I need an instructor or something.

If it is like mine it has straight 8 sights on it. Which is basically a self defense style sight. If it does it will have one white dot dead center of the rear sight and one dot dead center of the front sight. A correct sight picture for these are different from what you were taught.
Put the dot on the front sight directly over the dot on the rear so that it looks like an 8, and cover the bullseye with the front dot. Dont hold it right under the bullseye like you were probably taught just cover the bullseye with the front dot and let'er rip.
Go to taurusarmed.net and search straight 8 sight picture and you will find a diagram.

You'd laugh, I gotta post a picture. I just built a big key west style coral pink and white chicken coop. :D Pay $5 for the stupid chickens and $500 to coop them up. She's loving it though, that's all that matters.

Assuming you are right handed here is how Jerry Barnhart taught me to hold the 1911:
Grab the gun in your right hand, thumb on top of the thumb safety. Grip the gun so hard your hand almost trembles then loosen up a bit until you have a steady grip. Wrap the four fingers of your left hand over the right hand fingers. Point you left thumb forward and lay it on top of the slide release. You should have slightly tighter grip with the right hand vs. the left hand, imagine about 60% right, 40% left. This grip works best with the Isosceles stance but you can adapt it to the Weaver also.
Be careful not to tighten your right fingers as you squeeze the trigger, its easy to do so but that will make your hand (and the pistol) turn down and left as you fire
