Mushroom encrusted wild turkey breast
Slice a wild turkey breast across the grain, making steaks about 1" thick.
Take a porcini mushroom or two, and chop it really fine in a food processor. Mix with an equal portion of bread crumbs. Season with a touch of cayenne.
Dip the breasts in flour, then in an egg wash, then in the mushroom/breadcrumb mix. Fry in oil in a heavy skillet over moderate heat until golden brown. Season immediately with salt and pepper. Ladle your favorite mushroom gravy over the top and serve.
This is dynamite with fried green tomatoes.
