clover is great for fall plantings. Wheat, oats, winter peas, brassicas all great plantings for the fall.

I use a mix of Buck Forage oats and australian winter peas alongside a strip of winter wheat.Clover is also good as is standing corn.

Biologic has several annual mixes, there probably a little higher than buy individual seed, but they have every thing you need. http://www.mossyoakbiologic.com/Scripts/prodList.asp?idCategory=10&section=store

I was thinking wheat, oats, and winter peas. When is the best time to plant? 30 days before first frost?

I plant around sept 15 so I can get good growth before the youth hunt.
If you plant too late you wont get good growth before it goes dorment.
I usually plant 75# wheat and 6# ladino clover per ac. That also makes a great draw for spring turkey.
