I was talking to my father-in-law about his father and brother trapping, around 35-40 years ago. He said they would just tack the skin to a board with the fur in toward the wood. Then they would sell it after it dried. My question is, would does this do to the hide if just left like that after it dried?

All they were doing is drying the hide, not tanning. If left like that, the mothes will lay eggs and young will eat and ruin the hide.
It is illegal to possess an untanned hide , so many days after trapping season goes out. Must be tanned to keep.[V]
