OK, I understand now. I think,,,

In your second sentence you mentioned "basting over the meat". Does that mean you baste your "cooking" meat with the same sauce in which you marinated it in ?

Momma always said not to baste with the marinade due to bacteria form the uncooked meat. I figure it would be ok to baste with it early in the cooking so that the marinade gets cooked as well, but I wouldn't re-use it near the end.

You are correct. That's why I was asking, I just wanted to make sure there was no cross contamination.

I baste mine up to 50% of the cooking process is done. I then pour the leftover marinade into a sauce pan to quick boil then cool. I either use it to make a sauce or use it for basting if the cooking process is long. ;)
