just wondering, do you all add any ground beef, pork or dry milk to your deer burger for a binder and/or grease? or do you simply use straight deer?

I use 20% Beef fat for ground Venison.

I use 20% Pork fat for making Venison Sausage.

Both those work great for me. ;)

If I am making chili or stew I dont add anything . Meetloaf or something I add pork .

One of the best things I've found is oats and an egg. I think the ratio is 2lbs ground deer, 1 cup oats, 2 eggs...Cannot remember for sure. It does not give the venison a different flavor like beef or pork fat does.

Best I ever tasted was this year , mixed in some smoked bacon, saw it in a huning mag, nice smokey flavor.

we usually grind up the shoulders into meat make it probably half and half of deer to burger...really really good

yep, I'll round you one up. I have used several mixes. I like the one from Bass Pro pretty good. I add Sage to it though. I'll PM you. ;)

Any of you guys ever make sausage using Poultry Seasoning ? I did a batch last week and it was pretty good. ;)

I butcher my own and grind a little smoked bacon in with my burger. It's the best ground meat I have ever eaten.

Hey C. L. I'm huntin a good venison sausage recipe too. Would really apreciate it, got a new grinder comin any day. Ive heard everything from pork butt, beef, beef fat, or pork fat for ground deer meat. Mostly wonderin about the spices though. thanks

Backwoodsjoe just gave you the answer tenntucky. ANY kind of flavored Bacon will do wonders in ground meat. Burger or Sausage. Just make sure to have that meat as cold as you can when you grind it. I would also freeze the grinder pieces as well. The colder you can keep the equipment the better.

Black Pepper
Kosher Salt
fresh Tyme
Red Pepper flakes
fresh Sage
toasted Fennel seeds

These are what I put in my sausage. I use a mini coffee grinder to grind and mix the spices. They are cheap and work perfect. ;)

I only use Kosher Salt and Black Pepper in my Burger. The flavored Bacon supplies the rest.

I dice the bacon then almost freeze it before grinding. It works much better than raw fat of anykind. It will not breakdown and stick near as bad either. ;)

Since you are down Pecan way,,,,try choppin up some Pecans and mix those in ? OR try some toasted Walnuts ?

I'm game...sounds good...just ordered a 3/4 horse grindin machine today. should be grindin by the end of next week. I have three deer to grind in the freezer. any particular percentage of pork to deer??

I have also been wondering how much fat is acceptable to just leave on the deer meat you set aside for grinds. I have been removing 100% off and it just seems to take me a long time. Sinews also, I try to remove everything, but what do others do?

None unless you just enjoy that strong, gamey taste to your ground. No amount of beef or pork fat covers that up.

REMOVE everything !!! ;) Like Quackr just said,,,get that stuff out of there. IF you don't, you will really hate it.

As for the Beef or Pork fat,,,I buy mine from Wolf's over in New Albany. They are cheap and the fat is clean. Sorry but I do not have a phone number, I just stop in there. They are located very close to Floyd Memorial Hosp. ;)
