27 lbs pork ,9 Tb salt, 6 Tb black pepper,4 Tb crushed red pepper,12 Tb ground sage. Make sure you have enough fat in the mix,(at least 1/3 fat) the fat is what carries the flavors through the sausage.First coarse grind meat. mix salt,peppers and sage in a pint of water,pour into ground meat, mix well , regrind. Any part of this recipe may be adjusted to your taste,but I think it is perfect,and the best I have ever used!and I have tried a bunch!
