Anyone have a good jambalaya recipe? I love that stuff. thanks

i love the jambalya as well. zatarain's makes a jambalaya mix that's available at the grocery store around the rice. add some hot breakfast sausage or hot sausage links, some fresh garlic bread and you'll wanna hit your mama !

don't have a recipe though.

here's what I make:

3 celery sticks, sliced
1 onion, sliced
1 green pepper, diced
4-5 cloves minced garlic
3 cups cooked basmati or long grain brown rice
1 pound meat... sliced andouille, smoked sausage, and/or cubed chicken
optional: half can drained diced tomatoes
optional: Tony Chachere's creole seasoning to taste
2 tablespoons olive oil
tabasco chipotle sauce

Brown the meat in a cast iron dutch oven if it's not already cooked, and remove. It's up to you whether you get rid of the grease. Sautee celery for a couple of minutes in the olive oil, in the same pot. It takes longer to cook than anything else. Put the onions and green peppers in when they just start to get a little softer. When they are a couple minutes from being done, put the meat back in, and also add the garlic, and tomatoes if you choose to. When it's finished, add the rice and stir thoroughly. Serve and douse with tabasco.

Amberjack???you have a retty good real deal critter recipe!!!! I'll stick to the courtbouillion and sauce picante.....

I will be cooking a huge pot of pastalaya at WBBP's farm this Monday Nov. 12 . This will be authentic cajun "Coon Ass" cooking. Throw that stuff in the box away!
