View Full Version : Preparing deer heart?

I have never tried this but for some reason I have been giving it some thought. Does anyone have any recipes for this just in case I get up the nerve to try cooking me one? If I decide to do it I will propably be the only one eating it, but I might give it a try.

I par-boil/simmer mine, then slice open, stuff with Italian Sausage Cornbread Dressing then finish in the oven. After I stuff it I lay big lettuce leaves over the top to keep it moist as it bakes to a finished temp of 160. (The Cornbread is already cooked so it just has to be re-heated to 160.)

Serve with buttered Carrots/Peas/Mushrooms. ;)

try it in a crockpot, two cans beef broth, some sliced mushrooms (dried morels from the spring if you got em:D, grocery store if you aint:(), one can of cream of mushroom soup and some sliced onions. salt/pepper (i like lots of pepper) to taste. cook all day and serve over egg noodles.

I second trader rob. Slice it, soak in salt water, salt, pepper, flour, and fry in bacon grease. I wish I had 20 or 30 deer hearts in the freezer. One makes a nice meal.

As a kid growing up on a farm,I had to eat lots of stuff i would'nt eat now,coon,possum,groundhog,okra..but the deer heart sounds pretty good:D

Tried it once,not to my liking at all.But some did give some interesting ways of cooking it.

I might have to try it sometime this year. As of now I have 3 hearts and livers in the freezer from this year that I was saving for trot line bait in the spring. Maybe I can sneak one in the crockpot and serve it to the wife thinking its a roast.

Round up some Elk hearts too ! Mmmm they are good ! ;)

Every since i have been hunting deer for the last 40 years. As a kid and now that i am a grown up. We always would take the heart along with the rest of the deer that we planned on making burger out of. It is just mussel. I garuntee you that you will not be able to tell the difference in the burger that the heart has been mixed in with and deer burger that does not have the heart in it.:)

Cut heart into 3/8" thick slices. Seal in ziploc bag with balsamic vinegar, olive oil, and coarsely ground black pepper, and refrigerate for a day. Grill quickly over high heat, then eat immediately.

Good stuff.

Clean and slice 3/8 thick, dump in ziplock with BBQ rub, White Wine, Balsamic Vin, Green Onions, smashed Garlic cloves, pinch of Allspice, 2T Chinese mustard. Marinate overnight, grill like Beef Steak.
