Can everyone post phone numbers and addresses to where they get their deer cut up and summer sausage made? Also does any of them strip out for jerkey

Hopefully close to the Mountains

The best place I know of is in Grayson county which is a long way from you. :( Got to be somebody in Eastern Ky. as well, Good Luck.

Use frozen roasts or round steaks and let them halfway thaw. Then use a real good serrated knife and cut the strips about 1/8" to 1/4" thick. I use a one gallon glass pickle jar and soak the strips overnight in marinate (store bought Backwoods brand) pat dry with paper towel then lay them on racks (wife's pie cooling racks) and line the bottom of the oven with foil to catch any dripping. Takes about 3-4 hours in a 175 degree oven, alternate open and closing the oven door for better drying.

I also like to use High Mountain cure, which is sprinkled on and the strips stored overnight in ziplock, then same method or dehydrater. It's some work, but well worth a Sunday afternoon and you can still watch football while you do it!

Sorry, I didn't see you were really posting for Summer Sausage. My bad. Still, it'l make for some killer Jery! Webb's Butcher Block in Payneville makes some of the bestSummer Sausage, but it's a haul for you.

If you have a grinder just call LEM 1-877-536-7763 and they can set you up with what you need to make it. They even have the grinders. You should try the trail bologna to me it is alot better than the summer sausage!!

I just tried some today from our local deer processor and it was great. We are located between Maysville and Ashland on the Ohio River. $10 a roll for 2 1/2 pound rolls. Let me know if you are interested, I can get you the number.

I hope you like eating plenty of hair, that is the dirtiest processor I have ever seen. They were shut down once for being so dirty.

Garrison, Ky in Lewis County. We are located along the Ohio River between Maysville and Ashland. Garrison Meat Processing is the name I think. He is also making a large "slim jim" style meat that has a heavy smoke if you like that kind of stuff.

Walley up at the triangle market in Martin still makes deer sausage if you take him the meat. Dont remember what he charges.
