Ive got a bit of meat from a deer i killed last year, would it be safe to use it to make jerkey? i want some badly but havent had the chance to get out and kill one yet..and there are no guarantees that i will anytime soon, my ML crapped out on me and im not the greatest with bow

Assuming it has been frozen, you should be fine. Heck, I've jerkied from late 2005 and ain't had a problem. It's burger and it's been frozen hard from the day it was processed. :)

I have cooked it that was 2 or 3 years old before. As long as it has been frozen and wrapped up air tight it'll be fine. If it hasn't been wrapped well it'll be freezer burnt.

some of it wasnt wrapped as tightly as i thought, it was a little freezer burnt in some places but i cut all of that part off. seems to be turning out right so far.

As long as you trim atleast 1/4inch past the freezer burnt area the meat will be just fine.
Another reason to buy a vac packer. They can't be beat ! ;)
